It is the shape most often found in the finest baklava shops of Gaziantep's old bazaars, and the one most associated with the city's protected GI status.
At Saytad, we honour this tradition by hand-cutting every tray before it enters the oven. The phyllo is stretched by hand to near-translucency, layered with freshly ground Gaziantep pistachios, and soaked after baking in a syrup made from pure water, sugar, and a squeeze of lemon — nothing more. The result is a baklava that is light, crispy, and deeply satisfying with every bite.
